AccuSharp 001 Knife Sharpener

The AccuSharp 001 Knife Sharpener is one of the least expensive knife sharpening tools out there. You will not find another tool that is this inexpensive and this simple to operate. Naturally, the AccuSharp 001 does not have the all of the bells and whistles that many premium manual knife sharpeners or electric knife sharpeners. However, the AccuSharp is not competing in that space, it is made for the consumer who wants a simple way to sharpen kitchen knives and other blades in an inexpensive fashion. On that goal, the AccuSharp 001 succeeds wildly.


Using the AccuSharp 001 Knife sharpener is a breeze. Simple rest the blade on a flat surface, cutting edge facing up. Leaving the blade on the surface, place the v-groove of the AccuSharp on the base of the blade and pull using a even stroke. There is a finger guard to prevent grazing your skin on the cutting edge, but even so, be sure not to use too much pressure to prevent injury or damaging the blade. It will take several pulls to initially shape the blade, but once the proper angle is set it should only take a few more pulls to reset the edge on subsequent sharpening sessions.



The sharpening surface is made of hardened tungsten carbide and requires no oil. It is difficult to estimate how long the sharpening surface will last. The manufacture estimates that it will last 5-10 years, but some users report less. However, even a the lower estimates, the number of knives that can be sharpened makes the AccuSharp a great investment. Plus, the the sharpening blades can be flipped around, effectively doubling the life of the sharpening surface. Replacement sharpener blades run around $10 per pair.


To be honest, I would not use the AccuSharp 001 on my most prized knives- Japanese blades worth several hundred dollars (Asian blades should be set to 15 degrees, anyway), but this would be a great option to sharpen a lot of “everyday” kitchen knives or utility blades. Because it is so inexpensive and so easy to operate, you will find yourself sharpening your blades more often. And this is a good thing! Sharp blades are safe blades and sharp blades make cooking so much easier. The bottom line is that the AccuSharp 001 Knife Sharpener is a great buy.
