Stage 2 is a finer stage and will be where you begin sharpening blades that are not entirely dull. Stage 3 is the polish/strop stage. It removes microscopic amounts of metal, leaving the blade razor sharp and ready for the most demanding kitchen tasks.

One great feature of this and most other Chef’s Choice knife sharpeners is the advanced bevel technology. While the very tip of the blade will be 15 degrees, this sharpener bevels two larger angles below the initial cutting surface, resulting in a more robust blade that will stay sharp longer.
